Ingredients

  • Thin noodles 150 g
  • Salt to taste
  • Chicken 200 g
  • 1 medium onion, chopped
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon Thai curry paste
  • 1–2 small red chilies
  • 2 tablespoons lemon juice
  • ½ teaspoon ground white pepper
  • 1 teaspoon sesame oil
  • 2 tablespoons cooking oil

  • Instructions

    1. Wash the chicken, cut it into thin strips, and boil it in a bowl of water for five to seven minutes. Remove it from the water (reserve the broth).
    2. In a wok, add the cooking oil and onions and fry until lightly softened.
    3. Then add the chopped chilies and Thai curry paste and fry for one to two minutes.
    4. Layer in the boiled noodles and chicken.
    5. Drizzle soy sauce and broth between the layers.
    6. Let it steam for two to three minutes without stirring so the steam rises.
    7. Then drizzle with lemon juice, green onion leaves, and white pepper, and mix with two spoons so the noodles don't break.
    8. Finally, drizzle sesame oil and remove from the heat.
    9. Transfer to a beautiful, wide serving dish and serve hot.
