- Wash the chicken, cut it into thin strips, and boil it in a bowl of water for five to seven minutes. Remove it from the water (reserve the broth).
- In a wok, add the cooking oil and onions and fry until lightly softened.
- Then add the chopped chilies and Thai curry paste and fry for one to two minutes.
- Layer in the boiled noodles and chicken.
- Drizzle soy sauce and broth between the layers.
- Let it steam for two to three minutes without stirring so the steam rises.
- Then drizzle with lemon juice, green onion leaves, and white pepper, and mix with two spoons so the noodles don't break.
- Finally, drizzle sesame oil and remove from the heat.
- Transfer to a beautiful, wide serving dish and serve hot.
